    I have collard greens that we will be trying sometime this week. Also we will be making some beet apple salad. We’ve had beet carrot salad but never beet apple. Hopefully we all like it.

    We try to get a new food to try at least once a month. We currently have 2 foreign exchange students living with us so it’s all new to them. This week I made kale Soup for the first time and it was a first for all of us to have kale! It was great! AND we had enough left over to braise and have as a side; who knew you could do that and it tasted as good as spinach?!

    That’s fantastic, Katie! I’m sure the exchange students you are hosting will have some interesting recipes to share as well. Kale soup sounds delicious. I’m planning to try a combination of kale and cauliflower this week. Yum!

    I am going to try jicama again. The first time we tried it, the kids didn’t like it. That was a while back. I think it is time to bring it back to the table and see what happens.
