This quick and simple mashed cauliflower recipe is a delicious and easy way to swap in a healthier option on your holiday table. Bonus, it’s packed with Vitamins C and B-12. Perfect paired with gravy and cranberry sauce.

Mashed Cauliflower

Ingredients for Mashed Cauliflower

4 cups coarsely chopped cauliflower
1/4 cup heavy whipping cream
1 teaspoon kosher salt
1 tablespoon extra virgin olive oil or butter

Directions for Mashed Cauliflower

1. Place the chopped cauliflower in a large heatproof bowl. Microwave on high, uncovered, for 12 to 15 minutes or until tender when pierced with a fork.

2. Load the cooked cauliflower, heavy whipping cream, salt, and olive oil into a food processor. Blend for 2 minutes, or until creamy. Serve immediately.

Note: If your kids prefer a chunkier texture, mash the cauliflower with a potato masher instead of using the food processor.
