Portobello Mushroom Pizza

Ingredients
  • 4 large portobello mushrooms
  • 2 tablespoons extra virgin olive oil
  • Kosher salt
  • 1 cup shredded mozzarella
  • 1 cup torn kale pieces
  • Selection of veggies for garnishing
Instructions
  1. Preheat the oven to 375°F. Line a baking sheet with parchment paper. Remove the stems and gills of the mushrooms, wash, and gently pat dry with paper towels. Let your kids paint the oil onto the mushroom caps. Sprinkle with kosher salt.
  2. Roast 6 to 7 minutes or until the mushrooms release their juices and begin to turn brown on the edges.
  3. Remove from the oven. Add the cheese, kale, and whichever additional veggies your kids would like to personalize their pizzas. Bake 5 to 6 minutes more or until the cheese is melted and the veggies are crispy. Serve immediately.
