Tomato Basil Mozzarella Pops from The 52 New Foods Challenge

Ingredients for Tomato Basil Mozzarella Pops:

1 pint cherry tomatoes
1 cup mozzarella balls or cubes of your favorite cheese
¼ cup extra-virgin olive oil
A handful of fresh basil leaves
12 wooden skewers

Directions for Tomato Basil Mozzarella Pops:

1. Wash the tomatoes and using your fingers, remove the green tops. Load the tomatoes into a large bowl as you go.
2. Drain the mozzarella balls, then add them to the tomatoes.
3. Add the oil and salt to the tomatoes and mozzarella. Stir gently to combine.
4. Skewer the tomatoes, mozzarella, and basil leaves, alternating between them.
5. Serve the skewers in a small glass vase or cup, like a bouquet. Mix together the remaining ingredients into a fresh Caprese salad.

Tip: Encourage your kids to get creative with this recipe. Try Greek salad on a stick by combining cherry tomatoes, cucumber chunks, olives, and cheese.
