Mashed Cauliflower

- 4 cups coarsely chopped cauliflower
- ¼ cup heavy whipping cream
- 1 teaspoon kosher salt
- 1 tablespoon extra virgin olive oil or butter
- Place the chopped cauliflower in a large heatproof bowl. Microwave on high, uncovered, for 12 to 15 minutes or until tender when pierced with a fork.
- Load the cooked cauliflower, heavy whipping cream, salt, and olive oil into a food processor. Blend for 2 minutes, or until creamy. Serve immediately.
If your kids prefer a chunkier texture, mash the cauliflower with a potato masher instead of using the food processor.
